A hearty, healthy, and nutritious flavor-bomb, this curry recipe is loaded with green beans, tofu and potatoes for a meal you'll want to make over and over again.
​Servings: 2 Total time: 45 minutes

Ingredients

  • 200g/0.5 lb green beans (pre-cooked)
  • 2 medium potatoes (~300 g/0.6 lb)
  • 180g tofu (1 block/6 oz)
  • 1 onion
  • 3 cloves garlic
  • 1 can coconut milk (400 ml/13.5 fl oz)
  • 70g tomato paste (4 tbsp) (22-24%)
  • 4 tsp curry powder
  • 1 tbsp soy sauce
  • 2 1/2 tbsp sunflower oil
  • 2 tsp salt
  • 1/2 tsp black pepper
